Sterilisasi Kulit Ikan Kambing-Kambing (Abalistes stellaris) menggunakan Metode Iradiasi Gamma sebagai Bahan Baku Kolagen
Abstract
Starry trigger fish skin waste (Abalistes stellaris), commonly regarded as fishery waste, has potential as a collagen source due to its high protein content. This study investigated the moisture and protein contents, as well as the effect of gamma irradiation on the collagen functional groups in powdered A. stellaris skin. The experimental procedure consisted of four stages: washing, boiling, drying, and grinding. Proximate analysis revealed that the irradiated sample (A) contained 11.06% moisture and 42.75% protein, whereas the non-irradiated sample (B) contained 10.88% moisture and 45.74% protein. Despite these values, both samples failed to meet the standards of commercial fish skin powder. Furthermore, the pH values of sample A (6.57) and sample B (6.71) exceeded the normal range for fish skin powder (4.6–5.6). The observed differences were attributed to the effects of gamma irradiation treatment and variability in raw material processing. Overall, the findings indicate that gamma irradiation, as applied in this study, was not effective in producing high-quality collagen raw material from A. stellaris skin.
